Cactus Eaters

Nefarious has been asking me to get her dragon fruit (aka pitahaya) lately, and I figure the more healthy stuff we eat the better. It was on sale at the grocery store today so I got one for us to have for desert and it was a huge hit. The flavor was great — sort of like a sweet melon with the texture of a kiwi. We cut it in half, splitting it between us, and scooped out the flesh with a spoon. I highly recommend trying it if you never have before. I suspect it’s a pleasure that too many people let slip by them because they’re really not sure what to expect from this odd looking delicacy.

Other than that, I got a message from someone seeking permission to develop parts of my biography into a comic book. Now that’s an ego-stroke! I was pretty excited.

Speaking of overlooked food items, I made a salad recently out of kale, which is a light leafy kind of cabbage. You can get giant bunches of it for a dollar, so it’s less expensive than lettuce-type salad, and I suspect it’s much richer in terms of nutrients like beta carotene and vitamins. I ate it with a simple balsamic dressing (a bit of mayonnaise, a bit of oil, and a bit of vinegar) and it was quite refreshing.

    Kale is delicious, you should see if you can get chard, it’s also hella yummy. (young chard good for salads, older chard needs to be cooked) My friends have a stake in a farmshare and chard is in season, so we’ve eaten it in everything from curries to fajitas :D

    Though when buying it out of season, the grocery store checkout girls NEVER know what it is!

    You can also toast your kale, chop it, throw it on a cookie sheet, sprinkle with an oil of your choice and some salt (and/or other seasonings). The nuttiness of the kale really comes through then and it’s a change from the routine steaming (that it usually gets in our house).

    Dragon fruit I found a bit of a let down. Really attractive fruit, but the taste was a bit of a poor impersonation of kiwi IMO. Chard was another eye-pleaser that left me a tad cold, though it’s a versatile enough leaf if you’re short of soil.

    That crispy kale recipe sounds amazing, Andrew, going to have to give that a go!

    It’s a traditional winter food here in Holland, sliced into thin strips, boiled and mixed with mashed potatoes, then eaten with smoked sausage. I didn’t even know you could make salad with it! :)

    Red cabbage, kale, pea shoots, peas, mint and coriander.

    I love how it stands up to acid and heat. I made a lime/mayo/hot sauce dressing and it lasted 3 days in the fridge without wilting.

    I am fairly late to comment but pitayas taste delicious! My family is from Oaxaca Mexico and it was somewhat common place to make “waters” with pitayas. Anything with pitayas is great!
